However,  there are issues with any diet that is low in fiber and high in difficult-to-digest foods.  There are many who find the diet somewhat bland, as well.<\/p>\n<p>But these issues can all be overcome with some forethought and preparation.  That being said, here are some of the meals I eat while on CKD, along with recipes I&#8217;ve come up with that you might enjoy.<\/p>\n<p><strong>Italian Chicken<\/strong><\/p>\n<ul>\nCover the bottom of a 10&#8243; skillet to about 1\/4&#8243; with Italian salad dressing.  Over medium high heat, bring just to frying temperature (it won&#8217;t take  long).<\/p>\n<p>Place 3-4 chicken breast tenderloins in the skillet.  If frozen, let them cook a bit longer, turning often.  As chicken thaws, use knife and fork and carefully cut the chicken into smaller pieces (this ensures thorough<br \/>\ncooking without overcooking and also tends to help digestion).  <\/p>\n<p>When chicken is cooked, drain off excess salad dressing (it does contain a few carbs), place chicken in a bowl, sprinkle with Parmesean cheese, and serve.<\/ul>\n<p><strong>Delicious Ground Turkey<\/strong><\/p>\n<ul>\nStart browning 1 lb of ground turkey (mixed, not just breast).  Immediately add just enough Worcesteshire sauce to cover the bottom of the pan.  <\/p>\n<p>Add 1 tbsp each of seasoned salt, black pepper, and onion powder, and add 1\/2 tbsp of garlic powder.  Cook on medium-high heat stirring constantly until turkey is thorougly done.  <\/p>\n<p>Drain fat and add more Worcesteshire in its place.  Add enough Tabasco sauce to color the top of the meat.  Place serving in a bowl, sprinkle with Parmesean or Mozerrella cheese, and serve.<\/p>\n<p>Don&#8217;t worry, despite all the pepper and Tabasco, it&#8217;s not at all hot.  Warning, though- restrain yourself.  Once you start eating this, it&#8217;s hard to stop.  I&#8217;m not kidding, the first time I made this I ate nearly an entire pound of ground turkey and made myself sick. <\/ul>\n<p><strong>Turkey Breast Pesto<\/strong><\/p>\n<ul>\nFrom your grocery deli, get high-quality turkey breast sliced 1\/8-1\/4&#8243; thick.  Arrange slices on plate and heat in microwave for 1 minute on high.  Cover with a thin layer of your favorite premade pesto (available in the<br \/>\nrefrigerated pasta section).  Heat for about 10 seconds more, sprinkle with Parmesean or Mozerrella cheese, and serve. <\/ul>\n<p><strong>Other staples of my low-carb diet include:<\/strong><\/p>\n<ul>\n<li>Skyline Chili (mmmm!)<\/li>\n<li>Roast Beef au jus<\/li>\n<li>Ham and cheese omelette<\/li>\n<li> Chicken and cheese omelette (also try using the Italian Chicken above)<\/li>\n<li>Turkey bacon (great for snacking instead of chips)<\/li>\n<li>Chicken cordon bleu (not breaded, of course)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The low-carb diet (Cyclic Ketosis Diet, or CKD) works for me.
